  5. Mix the mushrooms with the finished risotto, add parmesan, salt and pepper. Remove from heat and serve hot.

3. Mushroom julienne in cocottes

Ingredients:

  • 300 g of champignons or other mushrooms
  • 1 bulb
  • 200 ml of cream
  • 100 g of hard cheese (Emmenthal, Parmesan)
  • 2 Art. l. butter
  • 1 Art. l. flour
  • Salt, pepper to taste

Preparation:

  1. Cut the mushrooms and fry them together with the onion in butter until golden.
  2. Add the flour and mix, then pour in the cream and simmer until the sauce thickens.
  3. Place the mushrooms in cocottes or small baking forms, sprinkle grated cheese on top.
  4. Bake in an oven heated to 180°C for 10-15 minutes until the cheese is browned.
