Mashed soups for cold days – three recipes for a cozy dinner

When it’s cold outside, there’s nothing better than hot mashed soup, which will not only warm you up, but also give you a sense of comfort. The creamy texture and rich taste of such soups make them an ideal choice for a family dinner.

We offer three proven recipes that you can easily prepare at home.

1. Pumpkin puree soup with cream

Ingredients:

  • Pumpkin – 600 g
  • Potatoes – 2 pcs.
  • Carrot – 1 pc.
  • Onion – 1 pc.
  • Cream (15-20%) — 200 ml
  • Butter – 20 g
  • Salt, pepper, nutmeg – to taste

Preparation:

  1. Clean the vegetables and cut them into large pieces.
  2. Melt the butter in a saucepan, fry the onion until transparent.
  3. Add the pumpkin, potatoes and carrots, pour water or broth so that the vegetables are covered. Cook for 20-25 minutes until soft.
  4. Drain some of the liquid, grind the vegetables with a blender to a creamy consistency.
  5. Add cream, salt, pepper and a pinch of nutmeg. Bring to a boil, do not boil.
  6. Serve with crackers or pumpkin seeds.

2. Broccoli and cheese puree soup

Ingredients:

  • Broccoli – 500 g
  • Potatoes – 2 pcs.
  • Onion – 1 pc.
  • Butter – 20 g
  • Cream or milk – 150 ml
  • Hard cheese (cheddar, parmesan) – 100 g
  • Salt, pepper – to taste

Preparation:

  1. Cut the broccoli into florets and the potatoes into cubes.
  2. Fry chopped onion in butter until golden.
  3. Add potatoes, cover with water and cook for 10 minutes. Then add the broccoli and cook for another 7-10 minutes.
  4. Grind the soup with a blender, add milk or cream, bring it to the desired consistency.
  5. Add the grated cheese, mix until it is completely dissolved.
  6. Serve with croutons or fried bacon crumbles.

3. Mashed mushroom and potato soup

Ingredients:

  • Mushrooms – 400 g
  • Potatoes – 3 pcs.
  • Onion – 1 pc.
  • Cream (20%) — 150 ml
  • Garlic – 1 clove
  • Olive oil or butter – 2 tbsp. l.
  • Salt, pepper, dried thyme – to taste

Preparation:

  1. Cut mushrooms into slices, onions into cubes, and potatoes into pieces.
  2. In a saucepan, fry mushrooms, onions and garlic in oil or butter until golden.
  3. Add potatoes, pour water or broth, cook for 15 minutes until ready.
  4. Grind the soup with a blender, add cream and spices. Heat without boiling.
  5. Serve with homemade croutons or green onions for flavor.

Tips for perfect soup puree

  • Density. If the soup is too thick, add a little milk, cream or broth.
  • Aroma. Add fresh herbs (parsley, dill or basil) before serving.
  • Texture. For a richer taste, you can add toasted nuts, seeds or cheese crumbs on top.
