Incredibly tasty and fluffy pies with cabbage

Who doesn’t like pies, one with cabbage. In my opinion, this is simply a classic of Ukrainian baking. There are many options for dough and filling, we offer you another wonderful recipe for fluffy, tender pies with a classic cabbage filling.

Ingredients:

For yeast dough:
  • 240 ml. milk (warm)
  • 1 Art. l. sugar
  • 6 g of dry yeast
  • 1 egg at room temperature
  • 30 g of melted butter (warm)
  • 1 Art. l. vegetable oil
  • 400 g of flour
  • 1 tsp. salt
For the filling:
  • 1 large bulb
  • 2 medium carrots
  • half a head of cabbage
  • salt
  • ground black pepper
  • bay leaf
  • Vegetable oil for frying

Yolk and 1 tbsp. l. vegetable oil for greasing pies

    Preparation:

    We prepare the dough:
    • Add a spoonful of sugar and yeast to the warm milk. Mix and leave in a warm place for 10 minutes.
    • Add an egg, a little cream and vegetable oil. Mix until smooth.
    • Add flour and salt. Mix
    • Knead the dough. If you have a mixer with a dough attachment, knead for 5 minutes. Knead with your hands for 15 minutes, until the dough starts to come away from your hands and the surface.
    • To prevent the dough from sticking at the end of the kneading process, grease your hands with vegetable oil, form a ball, cover with a towel and leave in a warm place for 40-60 minutes, until it has tripled in size.
    • When the dough has risen, we pass it around to release carbon dioxide and leave it for another 40 minutes.
    Prepare the filling:

    While the dough is rising, prepare the cabbage filling.

    • Cut 1 large onion into cubes, grate carrots on a large grater, chop cabbage.
    • Add vegetable oil to the pan and fry the onion for 2 minutes, then add the carrots and fry again for a few minutes. Add cabbage, stir in a little water, cover with a lid and simmer for 10 minutes.
    • Add salt and pepper to taste, mix and simmer again for 30 minutes, or until the cabbage is soft.
    • 2 minutes before it is ready, add a bay leaf, make a big fire and, stirring, evaporate the liquid so that the filling is not too juicy.
    • Remove a bay leaf from the finished filling. Let it cool down.
    We form pies:
    • Grease the work surface with vegetable oil so that the dough does not stick. Divide the dough into 10 equal parts. Use a rolling pin to form round shapes. Place the filling in the center and form a triangle. You can make pies of any shape convenient for you. Place on a baking sheet lined with parchment. Cover the finished pies with a towel and let them stand for 15 minutes to rise.
    • Turn on the oven at 180 °C.
    • Beat the yolk with vegetable oil and grease the cakes.
    • Put the cabbage pies in the oven for 3 minutes or until they are browned.

    Cover the finished pies with a towel, let them cool and enjoy.
